I have tried and failed on two different occasions to create a tasty, vegan, chocolate chip cookie. This time...I hit the jackpot! This is a quick and easy recipe, and you will have to stop yourself from eating several. They are that good!
I was definitely overthinking the recipe at first, but then I went to one of my old "before vegan" chocolate chip cookie recipes that was a family favorite and veganized it. I researched ingredient substitutes, and I gave it a shot and hoped for the best. It's not a good feeling when you buy organic ingredients at Whole Foods, and end up tossing the final product in the garbage because they taste terrible...I was determined to get it right this time!
