Quesadillas are one of my top, favorite meals. You can be as creative as you want to be and incorporate many different ingredients. You can get super technical, but I like to keep it quick and easy using fresh, organic ingredients! Many restaurants have veggie quesadillas on the menu, but if you're vegan the composition of the quesadillas usually poses a problem. Some restaurants are able to substitute dairy cheese with vegan cheese, but often times they contain a hefty amount of animal fats as well. Fortunately, you can make this delicious, inexpensive meal in the comfort of your own home. These quesadillas are absolutely fabulous!
