Vegan Recipes: 10 Ingredients or Less

Fresh Burrito Bowl

Before the whole food poisoning crisis hit Chipotle, it was one of my favorite places. I would frequently order a burrito bowl from the eatery, but then came the epidemic of bad headlines regarding food safety. The chain is still struggling to recover, and I have never revisited the place. So, of course the natural thing to do would be to create my own version of my favorite Chipotle dish, the burrito bowl...and I did exactly that!

In fact, once I combined all of my ingredients I found I liked my version way better than the one that I frequently bought before from Chipotle. I used organic, fresh ingredients, vegan cheese, and my homemade guacamole. This dish is absolutely delicious, quick, and easy to make for a great lunch or dinner recipe.

Ingredients
  • 1 cup organic brown rice
  • 1/2 organic red bell pepper
  • 1/2 organic green bell pepper
  • 1/4 cup organic red onion
  • 1 cup organic baby spinach (I used this brand.)
  • 1 tbsp guacamole 
  • 1 oz cheddar Vegan Gourmet Shreds
  • 1/2 cup organic black beans
  • 1 tsp fresh lime juice
  • 1/4 tsp sea salt

Instructions   
  1. Prepare guacamole using 2 large avocados, 1 tsp fresh lime juice, 1/4 cup chopped red onion, and 1/4 tsp sea salt.
  2. Prepare black beans.
  3. Prepare brown rice.
  4. Layer brown rice, black beans, spinach, peppers, onions, cheese, and avocado in a bowl.
  5. Enjoy!
