Vegan Recipes: 10 Ingredients or Less

Greek Pizza

After having an amazing Greek pizza from Blue Moon Pizza the other day, I was inspired to make my own. I normally use Daiya Mozzarella Style Shreds in my recipes, but this time I decided to try Vegan Gourmet cheese to see if there is a difference between the two.

The Vegan Gourmet Shreds do not melt or stretch as well as the Daiya Mozzarella Style Shreds, but I made it work! The pizza still tasted great, and the overall ingredients meshed together superbly Next time, I will use Daiya.

Rich, zesty, tasty, flavorful, and only eight ingredients!

Ingredients
  • 1 cup artichoke hearts
  • 1/2 cup Vegan Gourmet Mozzarella Shreds
  • 4 organic pitted kalamata olives
  • 1/2 cup organic pizza sauce
  • 1 cup organic sliced red onion
  • 1 cup organic baby spinach
  • 1 organic whole wheat thin & crispy pizza crust
  • 1 tbsp organic extra virgin olive oil

Instructions   
  1. Preheat oven to 400 degrees. 
  2. Prepare artichoke hearts and set aside. I used this brand.
  3. Spread olive oil over entire pizza crust.
  4. Spread pizza sauce over crust, and sprinkle cheese over sauce. Set 1/4 cup of the cheese aside.
  5. Spread red onion evenly over cheese.
  6. Bake for 10 minutes.
  7. Remove from oven and add spinach, olives, and sprinkle remaining cheese atop pizza.
  8. Bake for three more minutes.
  9. Serve and enjoy!
