Chocolate Peanut Butter Cups

As I stated in a previous post, we absolutely love the flavors of chocolate and peanut butter in our house. I wish I had stock in Justin's, because we have been avid purchasers of the dark chocolate peanut butter cups for a long time. That is my daughter's absolute favorite treat. I challenged myself to figure out a way to make them at home and incorporate some of the same natural ingredients.

Oh. My. Goodness. These peanut butter cups are very rich and decadent. The chocolate provides just the right amount of sweetness. When you bite into the creamy, silky peanut butter, the flavors combine to create a rewarding dessert that definitely satisfies the sweet tooth! Before I could blink, I had already downed two, and my daughter was asking for seconds as well!

Ingredients
  • One 10 oz package of semi-sweet chocolate mega chunks. (I used a dairy, nut, and soy free brand.)
  • 2 tbsp creamy peanut butter
  • 1 tbsp unrefined virgin coconut oil
  • 2 tsps organic cane sugar
Instructions   
  1. Melt chocolate in microwave at 1 minute intervals until completely melted.
  2. Remove from heat, add 1 tsp organic cane sugar, and whisk to combine.
  3. Spoon half of the melted chocolate evenly into the cupcake liners in the cupcake pan.
  4. Slide pan back and forth on counter so chocolate will settle evenly into the liners.
  5. Place in freezer for 15 minutes.
  6. Remove from freezer.
  7. Add 1 tbsp of coconut oil to the peanut butter, and stir until smooth and creamy.
  8. Add 1 tsp organic cane sugar to peanut butter and stir to combine.
  9. Spoon peanut butter mixture evenly into cupcake liners.
  10. Slide pan back an forth on counter so peanut butter will settle evenly into the liners.
  11. Add the remaining mixture of chocolate to the cupcake liners.
  12. Slide pan back and forth on counter so chocolate will settle evenly into the liners.
  13. Place in freezer for 15 minutes. 
  14. Store chocolate in airtight container in the refrigerator (2 weeks).
