Chick'n Quesadillas

Quesadillas are one of my top, favorite meals. You can be as creative as you want to be and incorporate many different ingredients. You can get super technical, but I like to keep it quick and easy using fresh, organic ingredients!

Many restaurants have veggie quesadillas on the menu, but if you're vegan the composition of the quesadillas usually poses a problem. Some restaurants are able to substitute dairy cheese with vegan cheese, but often times they contain a hefty amount of animal fats as well. Fortunately, you can make this delicious, inexpensive meal in the comfort of your own home.

These quesadillas are absolutely fabulous! The whole grain tortillas have a crisp, light crunch, the Daiya cheese melts just right and holds the peppers, onions, and chick'n together, and the dairy free sour cream tops everything off perfectly.

Recipe Type: Main, Chicken Quesadillas

Ingredients
  • 1/2 (8 oz) package of Tofurky Slow Roasted Chick'n
  • 1/2 cup of organic bell pepper chopped
  • 1/3 cup organic red onion chopped
  • 1/2 cup Daiya Mozzarella style shreds
  • 4 tsp organic extra virgin olive oil
  • 2 organic whole wheat tortillas

Instructions   
  1. Prepare Chick'n as stated on the package. Pour into bowl. Let cool. Put half aside to use for recipe.
  2. Add 2 teaspoons of extra virgin olive oil to pan on medium heat. Add red onions and bell peppers to pan. Stir frequently for about 5 minutes over medium heat.
  3. Remove from heat.
  4. Using separate pan, add 2 teaspoons of olive oil to pan on medium-low heat.
  5. Place one tortilla in pan.
  6. Sprinkle cheese evenly on tortilla.
  7. Distribute onion and bell peppers on tortilla.
  8. Place remaining tortilla on top. Press with spatula.
  9. Flip quesadilla and allow to cook for 3-5 minutes, or until crust is golden. 
  10. Remove quesadilla and cut into four equal parts.
  11. Serve and enjoy!

For Serving
  1. 1/2 cup iceberg lettuce
  2. 2 tbsps dairy free sour cream. I used this brand.
