Vegan Recipes: 10 Ingredients or Less

Nutty Dark Chocolate Bites

Whenever I have a craving for something sweet, I grab dark chocolate almost 100% of the time. This recipe combines the bold flavor of dark chocolate with the richness of creamy peanut butter and almond butter. It's decadent and good for you as well!

For this recipe, I used Scharffen Berger 70% Bittersweet Baking Chocolate, but you can you choose what works for you. 70% dark chocolate, in moderation, has several amazing health benefits including: lowering the risk factors for heart disease, reduced risk of diabetes, stroke, and heart attack, and lower blood pressure. Those are outstanding reasons, but I like it because it has a really rich taste as well. ​

This recipe was very easy to make, 
and it only uses six ingredients.

Ingredients
  • 1 cup of dark chocolate chips, or one 70% cacao baking bar                                                       (The brand I used was 9.7 ounces.)
  • 2 tbsp maple syrup (or more for your desired sweetness)
  • 1 tbsp almond butter
  • 2  tbsp peanut butter
  • 1tsp coconut oil 
  • Chopped almonds (or nuts
           of your choice)     

Instructions   
  1. Melt chocolate in microwave or saucepan until completely liquid.
  2. Remove from heat, and add maple syrup and coconut oil and whisk to combine.
  3. Add almond butter and peanut butter. Whisk to combine thoroughly.
  4. Taste, and adjust sweetness if necessary. I like the bittersweet taste of the dark chocolate,      but a few readers have suggested they used more maple syrup.
  5. Fold in chopped almonds or nuts of your choice.
  6. Line a baking sheet with parchment paper, and set in refrigerator or freezer to harden for 1 hour.
  7. Once hardened, cut into pieces/bars.
  8. Store chocolate in airtight container in the refrigerator (2 weeks).
