What makes a great chicken burrito? The ideal combination of tender chicken, fresh ingredients, and bold flavors, of course! I created this recipe and utilized Beyond Meat chicken strips, and they worked superbly!

This homemade guacamole took the flavors of the burrito to another level. It's quick and easy to make. All I used was avocado, sea salt, lemon juice, and cilantro. Avocados are not only delicious, they are packed with over 20 vitamins and minerals and have amazing health benefits.

Make bold, braggable burritos 
with only 8 ingredients!

Ingredients
  • Large Organic corn tortillas
  • Organic guacamole
  • 1/2 cup organic black beans
  • 1/2 cup organic quinoa
  • 3 oz organic kale
  • 6 strips of Beyond Chicken strips
  • 1/2 cup of organic, fire-roasted tomatoes
  • 1/4 cup Daiya mozzarella style shreds

Instructions   
  1. If you decide to make fresh guacamole like I did, you'll need 1 Large Avocado, 1 tbsp organic lemon juice, 1 tbsp chopped cilantro, and 1/4 tsp sea salt. 
  2. Open avocado, remove pit, spoon avocado into bowl, and mash with fork until creamy. Stir in lemon juice, chopped cilantro, and sea salt. Refrigerate until needed.
  3. Prepare black beans as product specifies.
  4. Prepare quinoa as product specifies.
  5. Prepare Beyond Meat chicken.
  6. Layer your ingredients in a warm tortilla.
  7. Serve and enjoy!
