Spicy Kale Tacos

Kale is loaded with vitamins and minerals and considered to be one of the world's healthiest foods. It's also high in fiber and heart healthy. I had some steamed kale leftover, so I decided to use it as one of the ingredients in my tacos. The taste was excellent, especially when I combined it with spelt tortillas and wild rice. I will be making this recipe again very soon because it is inexpensive, delicious, and very healthy.
Spicy, wholesome, filling, and only seven ingredients!

Ingredients
  • 1 spelt tortilla
  • 1/4 cup wild rice
  • 1/4 cup black beans
  • 1/4 cup chopped kale
  • 2 tbsp peach mango salsa
  • 1/4 cup red onion
  • 1 tbsp sriracha sauce

Instructions   
  1. Spoon wild rice and black beans onto warm spelt tortilla.
  2. Top with kale and red onion.
  3. Add mango salsa and drizzle with sriracha sauce.
  4. Serve and enjoy!
