Sweet Potato & Black Bean Burger

Black Bean Burger
​I was at Whole Foods the other day, and I saw their prepared veggie burgers. I immediately took a picture of the burgers and ingredients, and with a few ingredient changes I made my own version! Instead of quinoa I used organic brown rice, and I did not include cilantro.

​I was craving a veggie burger, and I have tried many different types. Some of my favorites are The Loving Hut Black Bean Burger and Hilary's World's Best Veggie Burger. This time I wanted something new!​

taste. They are healthy, 
delicious, easy to make,
​and 10 ingredients are all 
you need.

Ingredients
  • 1 cup sweet potato mashed (1 large sweet potato)
  • 1 and 1/2 cups cooked organic brown rice
  • 2 cups cooked salted organic black beans (rinsed and drained)
  • 1/2 cup Panko bread crumbs
  • 1/2 cup finely diced red onion
  • 2 1/2 tsp ground cumin
  • 1/4 tsp each salt and pepper
  • 1/4 tsp garlic powder
  • 1 1/2 tsp balsamic vinegar

For Serving

Daiya Cheddar Cheese Slices
Lettuce
Ketchup

Instructions
  1. ​Preheat oven to 400 degrees. 
  2. Cut sweet potatoes in half and brush with (organic) extra virgin olive oil.
  3. Place potatoes cut side down in shallow baking dish.
  4. Bake approx 40 minutes, or until soft to the touch. Reduce oven temp to 375 degrees F.
  5. Cook brown rice while potatoes are cooking.
  6. Add black beans to mixing bowl and mash (mash about half of the beans for texture).
  7. Add sweet potato, brown rice, red onion, Panko, and spices.
  8. Mix to combine ingredients thoroughly. Mixture should be moist and not wet. It should be easily moldable.
  9. Lightly grease baking sheet, and prepare mixture into 8 equal sized balls.
  10. Press them gently to form the burgers. Bake for 40 minutes, carefully flipping them at 20 minutes.
  11. Serve as you wish. I used organic whole wheat buns.
  12. Store leftovers in the fridge or freeze if over a few days keeping.
