Vegan Recipes: 10 Ingredients or Less

Veggie Quesadillas

Quesadillas are on of my favorite meals. You can easily customize them by filling them with your favorite vegan ingredients. For this recipe, I used spelt tortillas and filled them with kale, red onion, red bell peppers, and yellow bell peppers. There are so many veggies with amazing health benefits, that it's very easy to create a delicious and nutritious meal.

I sauteed the vegetables in extra virgin olive oil to get them perfectly caramelized. Bell peppers have great health benefits. They are high in vitamin C, antioxidants, and fiber. Red onions have cancer fighting and anti-inflammatory properties, and studies show that half an onion a day could reduce the risk of stomach cancer by 50 percent!

The meal would not be complete without homemade guacamole. It is very simple to make, and I only used three ingredients: avocados, lime juice, and a pinch of sea salt.

Ingredients
  • 1/2 cup yellow bell pepper chopped
  • 1/2 cup red bell pepper chopped
  • 1/2 cup red onion chopped
  • 1/2 cup steamed chopped kale
  • 1 cup Daiya Mozzarella style shreds
  • 2 tbsp organic extra virgin olive oil
  • 4 whole spelt tortillas

Instructions   
  1. In a skillet on medium heat, add one 1 tablespoon extra virgin olive oil. Add chopped peppers and onions.
  2. Stir veggies frequently for about 5 minutes until caramelized.
  3. Remove from heat.
  4. Using separate or same pan, add 1 tablespoon of olive oil to pan on medium-low heat. distribute oil evenly to coat pan.
  5. Place one tortilla in pan.
  6. Sprinkle cheese evenly on tortilla.
  7. Distribute onion, peppers, and kale on tortilla.
  8. Place remaining tortilla on top. Press with spatula.
  9. Flip quesadilla and allow to cook for 3-5 minutes, or until crust is golden. 
  10. Remove quesadilla and cut into four equal parts.
  11. Repeat same process to make an additional tortilla.
  12. Serve and enjoy!

For Serving (Optional)
  1. Guacamole-2 medium avocados, 1 tsp lime juice, and 1/2 teaspoon salt
  2. Black Beans
  3. Sweet potato chips
